Abby is Three!

I've been a bad blogger, but I am back and gonna try to make sure to post daily! Life with two kiddos is hard enough without making time to blog! But I wanna remember everything...so onto my birthday girl!

Abigail Marie - Abby, B, Sissy, Sweet Pea, Sweets - turned 3 on April 9th! I cannot believe it has been that three years already! She has been a joy and a handfull all at the same time, but I wouldn't have it any other way :-)

We celebrated her birthday on Easter weekend. (we were pooped out by Easter evening) This year we decided to have her party at the park in my parents neighborhood. The weather was wonderful! Sunny, a little warm and a nice cool breeze! The pavillion was awesome for shade and to chow down on some yummy Cheezie's pizza...a fave of the birthday girl! As always we got a delicious and BEAUTIFUL cake from Cake Designs! We had friends and family come from all over, some even from Huntsville. It was so fun seeing the kids play and catching up!

At three years :
Abby is 30lbs - 50% abd 38 1/2 inches tall - 70%. She no longer NAPS, no pacy, no diaper - just a pull up at night. She loves to play with our ipad (not really an ipad, just a kindle fire - same thing). She loves all things girlie, painting toes, bubble baths, dresses, SHOES (thanks Nana) She is a better eater than a year ago. Some favorites are Mexican, Pizza, Lasagna, Chick-o-lay, Bananas, Apple Sauce, Pretzel Chips and Hummus (her FAVE FAVE). She is big into Dora, Tangled, Barbies, Mickey Mouse CH, and Phenius & Ferb. She talks, dances, sings, asks questions, non stop. If I call someone or they call me - "Who is that Momma?" She loves (95%) her brother or "Eef" as she calls him.

Yummy Veggie Pasta Sauce

This is the recipe so many asked me for after I pinned it to pinterest bg
yesterday! Side note: this worked so well and tasted amazing! Both my veggie- hesitant kiddos ate two helpings!

4 zucchini or squash ( I used squad since they didn't have the other) chopped
1 large onion chopped in big pieces
4 large peeled and diced carrots
I pack baby portabellas
I jar your fave tomato pasta sauce
1/3 stick 1/3 less fat cream cheese
2 tsp sugar
Chicken broth to thin out thickness

First I roasted the all the veggies except for the mushrooms! I used about a tbsp of evoo and toss the veggies with it. Next for the spices
2 tsp garlic powder
2 tsp onion powder
1/4 tsp red pepper flake ( u can omit)
1 tsp dried oregano
1 tsp dried basil
Salt and pepper

Roast on high heat 450 for about 10 minutes or until onion are translucent. I stirred them about halfway through.

While the veggies are roasting, heat your large saucepan/ stock pot and add the mushrooms and your tomato sauce. Add your roasted veggies and the cream cheese. Keep stirring to help melt the cream cheese. Add sugar and stir.

I used an immersion blender to purée the big chunks of veggies. It had more of a chunky salsa texture than an actual purée. If you don't Have one - let the sauce cool, then put it in the blender, until you get that consistency.

I used this in a lasagna last night, even my hubby thought the sauce looked like a meat sauce! Tasted great too! Happy cooking!
